Ingredients:
400 g of smooth flour
2 teaspoons baking powder
A pinch of salt
2 teaspoons vanilla sugar
100 g of sugar
1 lemon, zest
2 eggs
100 g of full-fat sour cream
200 g butter, chilled
100 g of sugar
1 kg of apples
2 teaspoons vanilla sugar
2 tablespoons rum
1 teaspoon cinnamon
Powdered sugar, to sprinkle
Preparation
Combine the ingredients
Combine flour, baking powder, salt, sugar, vanilla sugar and lemon zest. Add the sour cream, eggs and butter. Knead the dough and shape it into a ball. Wrap in plastic wrap and refrigerate for 45 minutes.
Prepare the apples
Peel an apple, grate it and put it in a hot pan. This way, your crispy dough will not get wet with apple juice. Add sugar, vanilla sugar and two tablespoons of rum to the pan and simmer for a few minutes. Add the cinnamon and continue to simmer for 2 to 3 minutes. Be careful not to caramelize the sugar. Remove the pan from the heat as soon as you notice that the liquid from the pan has evaporated. Leave for 20 minutes to cool.
Preheat the oven
Take the dough out of the fridge and divide it into two equal parts. Grease and flour the baking tray and shake off the excess flour. Preheat the oven to 180 degrees.
Roll it out
Roll out one part of the dough to the dimensions of the baking tray you are using and put the dough in it. Prick the surface of the dough with a fork and arrange the stewed apples. Roll out the second part of the dough and place it over the apples; stab with a fork.
Bake
Place in the oven and bake for 35 minutes. Once the pie is done, remove it from the oven and let it cool down.
Serve
Cut the pie into cubes and sprinkle with powdered sugar. Serve.
